During folk festivals, especially Spring Festival, Nine-layer Cake is indispensable for every family in Foshan and Nanhai regions, owing to its implication of "long-time happiness and gradual improvement". As an elaborated food, Nine-layer Cake is a kind of rice cake with sweet savor. The people first saturate the rice, then grind them into powder, mill into slurry, add some sugar water and braise them on silver plate, gradually add up to nine-layer. The braised cake is tasty and refreshing, coupled with distinctive arrangement. Somebody also adds some edible pigment into it so as to make it more beautiful. During festivals, in order to obtain luck, people divide the braised cake into diced pieces for the purpose of worshiping the Heavens and ancestors, then, families share it. During Spring Festival, people always present their relatives and friends Songgao Cake, Rice Cake, Jiandui and Youjiao, other than Nine-layer Cake. Its said that its no use of sharing this kind of cake with others.
